Mayonaise, de originele

1egg yolk

¼ tsp mustard powder

Pinch of salt

½ tsp white pepper

250 ml (rice bran) oil

1.5 tbsp white wine vinegar


In a large mixing bowl:

Whisk together yolks, mustard, salt and pepper and vinegar.

Then slowly pour in the oil, whisking continuously until you have a thick, glossy sauce.

Check the seasoning.

(Possibly add a bit of sweetener to taste)


If it curdles, add 1 or 2 tbsp warm water.
